How can I change the amount of gift certificates available?

When you enable Gift Certificates, the default setting allows a wide range of amounts. If you’d like to only offer specific amounts, you can make this change in the settings.

Go to Marketing > Gift Certificates and where it says “Gift Certificate Values”, select “Specify a list of allowed gift certificate amounts”. In the box provided, enter the desired values, one on each line. You can also choose to set expiry dates for your gift certificates. Note that some states prohibit gift certificates from expiring.

I recommend setting your gift certificate values fairly low to avoid fraud. Read my post about gift certificate fraud.
